Tzatziki Sauce for Burgers

Ingredients: ¼ plain dairy-free almond yogurt (I don't recommend using coconut yogurt) ¼ cup peeled, grated cucumber excess moisture removed 1 large garlic clove, minced ¼ teaspoon salt (or more to taste) ½ tablespoon fresh dill 1 teaspoon fresh lemon juice Directions: Mix all ingredients together in a small bowl. Drizzle on and over anything!

Fresh Salsa

Ingredients: 4 large tomatoes, cored, seeded, and diced ½ small red or yellow bell pepper 1 small jalapeño or Serrano pepper, seeded and minced ¼ cup minced onion 1 tsp lime juice ¼ tsp sea salt Directions: Combine all ingredients into a bowl. Refrigerate for at least 30 minutes or until ready to serve.

Tortilla Wraps

Ingredients: Hummus spread (recipe follows) Whole grain tortillas Spinach or shredded cabbage Shredded zucchini Shredded carrot Shredded celery Directions: Lay out tortilla and spread hummus over the entire tortilla. Layer spinach or cabbage across the entire tortilla. Add remaining filling ingredients. Roll tortilla.
