Roasted Butternut Squash

Ingredients: 3 lbs butternut squash, peeled and cubed 2 Tbsps olive oil  2 tsps smoked paprika ¾ tsp salt ½ tsp turmeric  ½ tsp garlic powder Directions: Preheat oven to 375 F. Toss butternut with oil and spices. Bake for 30-35 minutes stirring once or twice.

Barbecue Tofu Balls

Ingredients: 1/2 recipe tofu walnut balls 1 recipe BBQ sauce 1 10 ounce jar simply fruit apricot preserves Directions: Combine apricot preserves with bbq sauce. Place tofu balls in a 9 by 13 pan. Pour sauce mixture over balls. Bake at 350 for 45 minutes.
