Ingredients

  1. 15 oz can pumpkin
  2. ⅓ cup soy milk
  3. ⅓ cup honey
  4. 1 tsp vanilla
  5. ½ tsp maple extract
  6. ⅓ cup tofu

Directions:

  1. Blend all ingredients in a blender
  2. Top with tofu whipped cream or granola
  3. Note: For a creamier pudding, add ⅓ cup of silken tofu, 1 Tablespoon more honey and an additional dash of salt.
