IMG_3363Ingredients:

  1. 4 cups dried pinto beans
  2. ¾ onion, chopped
  3. ¾ green or red pepper
  4. 1 8 oz can tomato sauce
  5. 1 ½ Tbsp salt
  6. ¼ cup cilantro

Directions:

  1. Soak beans overnight with plenty of water to cover.
  2. Place in crockpot and cook for 6-8 hours on high.
  3. Sauté onion and pepper in a little bit of water.
  4. Blend onion mixture with 1 cup of beans and rest of ingredients listed.
  5. Add mixture to beans and stir well.
