Ingredients:
- 4 cups dried pinto beans
- ¾ onion, chopped
- ¾ green or red pepper
- 1 8 oz can tomato sauce
- 1 ½ Tbsp salt
- ¼ cup cilantro
Directions:
- Soak beans overnight with plenty of water to cover.
- Place in crockpot and cook for 6-8 hours on high.
- Sauté onion and pepper in a little bit of water.
- Blend onion mixture with 1 cup of beans and rest of ingredients listed.
- Add mixture to beans and stir well.
