3 Tbs oil (opt)
1 large onion, chopped
2 Tbs pimento, chopped
1 green pepper chopped
1/2 tsp salt (regular or I like the “black salt” which has sulfur in it and gives it a more egg like flavor. It’s available on amazon)
1 container water packed tofu crumbed (I use extra firm)
1 Tbs vegetarian chicken style seasoning (see link here for where you can get online)
1/2 tsp turmeric (gives yellow egg color)
1 tsp soy sauce


  1. Saute onion and pepper in the oil (or water if cutting out oil). Add rest of ingredients and continue to cook for 20 minutes, stirring constantly until all moisture removed and just starts to brown.
  2. Make sandwiches.
  3. I spread my bread with home made mayo or vegenaise.
  4. You can make and freeze ahead and then remove about 6 hours before eating (love to do this for road trips).
