Russian Salad

Ingredients:

  1. 3 cups kidney beans, drained and rinsed
  2. 1 14 oz can sauerkraut (containing no additives), drained
  3. 2 large potatoes, boiled
  4. 1 ½ cups fresh beets, shredded
  5. ½ bunch green onions
  6. 3 Tbsps non dairy sour cream
  7. 3 Tbsps reduces fat vegan mayo
  8. Pickle relish to taste

Directions:

  1. Combine all ingredients in bowl and mix well.
  2. Serve chilled.
