Ingredients:

  1. 12 oz shelled edamame
  2. 16 oz frozen (thawed) or fresh corn
  3. 8 oz can water chestnuts
  4. ⅔ cup celery
  5. ⅓ cup green onion
  6. ¼ cup red peppers

Dressing

  1. 5 Tbsp lemon juice
  2. 1 ½ Tbsp honey
  3. 1 ½ tsp salt
  4. 1 Tbsp parsley
  5. 1 garlic clove
  6. ⅛ tsp dill weed
  7. ¼ tsp basil

Directions

  1. Mix all dressing ingredients in a small bowl.
  2. Put all salad ingredients in bowl.
  3. Mix the two together and serve.
