1. 1 pound of California blend of frozen vegetables
  2. 3 medium sized potatoes
  3. 4 Tbs oil
  4. 15 ounce can of crushed tomatoes
  5. 1 tsp turmeric powder
  6. 1 tsp cayenne powder
  7. 2 tsp cumin seeds
  8. 2 tsp cumin powder
  9. 2 tsp coriander seed powder
  10. salt to taste
  11. cilantro to garnish


  1. Sauté cumin seeds briefly until brown.
  2. Add cut potatoes and continue to sauté.
  3. When potatoes are half way cooked, add tomato sauce.
  4. Cook until oil starts to separate from the pan.
  5. Add all the spices and mix for 1 minute.
  6. Add frozen mixed vegetables and cook covered for 10 minutes.
  7. Garnish with cilantro.
  8. Eat with rice and or chapatti.
