Ingredients:
- 6 oz Urad dal (7/8 cup) (available in Indian stores)
- 2 ounces (1/8 cup) red kidney beans (uncooked)
- 1 tsp salt
- 1 tsp tumeric
- 1/4 tsp cayenne pepper
- 1 1/2 tsp cumin seeds
- 2 tsp fresh ground coriander seeds
- 2 tsp oil
- 1/2 onion cut into small cubes
- 1 inch grated ginger
- 4 cloves crushed garlic
- 3 Tbs crushed tomatoes or tomato paste
- Fresh chopped cilantro to garnish
Directions:
- Wash and soak urad dal and red kidney beans in 5 cups water overnight in crock pot
- In the morning plug in the crock pot and add onion, ginger, garlic, salt, and turmeric powder.
- Cook for 8 hours
- Sauté cumin seeds until brown
- Add add crushed tomatoes and crushed coriander seeds to cumin seeds and sauté entire mixture briefly
- Add mixture to crock pot
- When ready to serve, garnish with freshly chopped cilantro
