Raita

Ingredients:

  1. 1 tomato, diced
  2. 1 cucumber, diced
  3. 1 white or red onion, diced
  4. 6 oz container of unsweetened soy or coconut unflavored yogurt–can also use Vegan Greek style yogurt (available at Publix Earth Fare)
  5. Salt to taste
  6. Pepper to taste

Directions:

  1. Combine all ingredients
  2. Enjoy!
